My spouse filed for a divorce. What will happen if I refuse to sign the divorce papers?

Unfortunately, whether or not you sign for the divorce papers, the Original Petition, does not really matter. In the event the constable or process server tries to serve you and you refuse to sign for the papers, the constable or process server will simple sign an affidavit stating that he/she gave you the papers. Or, in the alternative, if you try to hide from the process server or the constable, you can be severed through an alternative way of service such as posting the papers on your door or by publication.
